In a large pot or pan, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they are soft and translucent.

Add garlic and ginger

Stir in the minced garlic and grated ginger. Sauté for another 1-2 minutes until fragrant.

Incorporate spices

Add the Malayu curry powder to the mixture and stir well, cooking for another minute to release the flavors.

Cook the chicken

Add the chicken pieces to the pot, stirring to coat them in the curry mixture. Cook until the chicken is browned on all sides.

Add tomatoes and coconut milk

Stir in the diced tomatoes and pour in the coconut milk. Bring to a gentle simmer.

Simmer

Reduce the heat to low and let the curry simmer for 20-25 minutes, or until the chicken is cooked through and tender.

Add the sliced green chili and salt to taste. Stir well and simmer for an additional 5 minutes.
