1. Prepare the Rice Noodles
Soak the rice noodles in warm water for about 30 minutes or until they are soft. Drain and set aside.
2. Make the Egg Omelette
In a bowl, whisk the eggs and add turmeric powder. Heat a non-stick skillet over medium heat, add a little oil, and pour in the egg mixture. Cook until set, then flip and cook the other side. Remove from the skillet and slice into strips.
3. Prepare the Green Mango
Peel and julienne the green mango into thin strips.
4. Chop the Chives
Finely chop the chives and set aside.
5. Combine Ingredients
In a large bowl, combine the soaked rice noodles, egg omelette strips, julienned green mango, chopped chives, and dried shrimp. Toss well to mix.
6. Serve
Plate the noodle mixture and top with crushed peanuts and crunchy pork rinds. Serve immediately.
