    Prepare the Pork

    Cut the pork belly and shoulder into large chunks. Season with salt and black pepper.

    Sear the Meat

    In a large pot, heat the vegetable oil over medium-high heat. Add the pork pieces and sear until browned on all sides.

    Add Aromatics

    Add minced garlic and chopped shallots to the pot, cooking until fragrant.

    Braise the Pork

    Stir in the soy sauce, fish sauce, brown sugar, and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 1.5 to 2 hours, or until the pork is tender.

    In a separate pan, fry the eggs sunny-side up until the whites are set and the yolks are still runny.
