Preparation Instructions
Cook the Rice
Rinse the jasmine rice under cold water until the water runs clear. Cook the rice according to package instructions, usually by boiling in 1.5 cups of water until tender. Once cooked, fluff the rice with a fork and let it cool.
Prepare the Green Beans
Bring a small pot of water to a boil. Blanch the chopped green beans in boiling water for about 2-3 minutes until bright green and tender-crisp. Drain and rinse under cold water to stop the cooking.
Mix the Ingredients
In a large bowl, combine the cooled jasmine rice, shrimp powder, diced mango, blanched green beans, chopped cilantro, and chopped mint leaves.
Make the Dressing
In a separate small bowl, whisk together the lime juice, fish sauce, and chili flakes. Pour the dressing over the rice mixture and toss gently to combine.
Serve
Transfer the Khao Yum to a serving platter, sprinkle with chopped roasted peanuts, and serve immediately.
