Preparing Hat Yai Fried Chicken

Marinate the Chicken

In a bowl, mix garlic, white pepper, salt, and turmeric. Rub this mixture onto the chicken pieces and let marinate for at least 1 hour.

Prepare the Batter

In another bowl, mix all-purpose flour with water to create a smooth batter.

Fry the Chicken

Heat oil in a deep pan. Dip marinated chicken pieces into the batter, then fry until golden brown and cooked through, about 15-20 minutes. Drain on paper towels.

Cooking Sticky Rice

Soak the Rice

Soak glutinous rice in water for at least 4 hours or overnight.

Drain the soaked rice and steam for about 20-25 minutes until tender.

In a pot, heat coconut milk and add curry paste. Stir well and add vegetables. Cook until vegetables are tender, about 10-15 minutes. Season with fish sauce and sugar.

In a large bowl, combine all-purpose flour, salt, and oil. Gradually add water and knead until smooth. Let it rest for 30 minutes.

Divide the dough into small balls, roll them out, and cook on a hot skillet until golden brown on both sides.
