Preparing Hat Yai Fried Chicken
Marinate the Chicken
In a bowl, mix garlic, white pepper, salt, and turmeric. Rub this mixture onto the chicken pieces and let marinate for at least 1 hour.
Prepare the Batter
In another bowl, mix all-purpose flour with water to create a smooth batter.
Fry the Chicken
Heat oil in a deep pan. Dip marinated chicken pieces into the batter, then fry until golden brown and cooked through, about 15-20 minutes. Drain on paper towels.

Soak the Rice
Soak glutinous rice in water for at least 4 hours or overnight.
Steam the Rice
Drain the soaked rice and steam for about 20-25 minutes until tender.
