    Sauté the Aromatics

    In a large pot, heat the vegetable oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and ginger, cooking for an additional 2 minutes until fragrant.

    Add Spices and Tomatoes

    Next, add the curry powder to the pot, stirring to coat the onions and garlic. Add the diced tomatoes and cook for another 5 minutes, allowing the tomatoes to break down.

    Simmer the Broth

    Pour in the vegetable broth (or water) and coconut milk, stirring well. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes to develop the flavors.

    Season and Serve

    Season the broth with salt and black pepper to taste. Remove from heat and stir in the chopped fresh cilantro before serving hot with roti or chicken.
