Gather Ingredients

Ensure you have all the ingredients on hand before you begin: ripe but firm pears, Gorgonzola cheese, balsamic vinegar, sugar (for the balsamic glaze), walnuts, and optional mixed greens.

Wash Produce

Wash the pears thoroughly under running water. Pat them dry with a clean towel.

Prepare the Pears

Cut the pears into quarters, remove the cores, and then slice them thinly lengthwise. Set aside.

Toast the Walnuts

Place the walnuts in a dry skillet over medium heat. Toast for 3–5 minutes, stirring frequently, until they are golden and fragrant. Remove from heat and allow to cool.

Make the Balsamic Glaze

In a small saucepan over medium heat, combine 1/2 cup balsamic vinegar and 1–2 tablespoons of sugar (to taste). Bring to a boil, then reduce heat and simmer for 10–15 minutes, stirring occasionally, until thickened to a syrupy consistency. Remove from heat and let cool slightly.

Assemble the Salad
