Cheesecake Filling

    Prepare the Crust

    Preheat the oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of a 9-inch springform pan.

    Bake the Crust

    Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool while you prepare the filling.

    Make the Cheesecake Filling

    In a large mixing bowl, beat the cream cheese until smooth. Add the granulated sugar and vanilla extract, mixing until well combined. Add the eggs one at a time, mixing on low speed until just combined.

    Add Sour Cream

    Mix in the sour cream until fully incorporated. Pour the cheesecake filling over the cooled crust, spreading it evenly.

    Bake the Cheesecake

    Bake the cheesecake in the oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour.

    Remove the cheesecake from the oven and allow it to cool to room temperature. Cover and refrigerate for at least 4 hours, or overnight.
