Preparation and Cooking
Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to make fries.
Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch.
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).
Fry the Potatoes
Drain and pat the fries dry. Carefully add them to the hot oil in batches and fry until golden brown, about 4-5 minutes. Remove and drain on paper towels.
Prepare the Garlic Oil
