Prepare the lamb
Slice the leg of lamb thinly against the grain into bite-sized pieces.

Make the garlic herb spread
In a bowl, combine the cream cheese, minced garlic, and chopped fresh herbs. Mix until smooth and well combined.
Cooking

Cook the onions
Heat 1 tablespoon of olive oil in a skillet over medium heat. Slice the onion and add to the skillet. Sauté until caramelized, about 8-10 minutes. Season with salt and pepper.

Grill the lamb
In the same skillet or on a grill, add another tablespoon of olive oil. Cook the sliced lamb over medium-high heat for about 3-5 minutes, or until browned and cooked to your desired level of doneness. Season with salt and pepper.

Assemble the cheese steak
On the sub rolls, spread a generous amount of the garlic herb spread. Layer the grilled lamb, caramelized onions, and top with provolone cheese slices.

Place the assembled sandwiches under a broiler for 2-3 minutes, or until the cheese is melted and bubbly.
