    Prepare the noodles

    Cook rice noodles according to package instructions. Drain and set aside.

    Make the sauce

    In a small saucepan, combine coconut milk, soy sauce, lime juice, brown sugar, and chili paste. Heat over medium heat until warm and sugar is dissolved. Set aside.

    Stir fry the ingredients

    In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add chicken sausage and cook for 2-3 minutes until browned. Then add prawns, snap peas, and red peppers. Stir fry for an additional 3-4 minutes until prawns are cooked through.

    Combine everything

    Add the cooked rice noodles and Asian greens to the skillet. Pour the sauce over the stir fry and toss everything together until well coated and heated through.

    Serve

    Transfer to serving plates, garnish with chopped peanuts and fresh cilantro. Serve immediately.
