Prepare the Lentils

Rinse the red lentils under cold water until the water runs clear. In a pot, combine the rinsed lentils and water. Bring to a boil, then reduce heat and simmer for about 15-20 minutes, or until the lentils are soft and have absorbed most of the water. Remove from heat and let cool slightly.

Mix Ingredients

In a large bowl, combine the cooked lentils, diced onion, minced garlic, grated carrot, cumin powder, coriander powder, salt, black pepper, and chopped cilantro. Mix well until all ingredients are combined.

Form the Fritters

Using your hands, form the lentil mixture into small patties (about 2-3 inches in diameter).

Cook the Fritters

Heat olive oil in a non-stick skillet over medium heat. Once hot, add the fritters in batches, being careful not to overcrowd the pan. Cook for about 3-4 minutes on each side, or until golden brown and crispy.

Serve

Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve warm with your favorite dip or sauce.
