Prepare the Chicken
In a large bowl, combine chicken thighs, grated ginger, chili flakes, soy sauce, rice vinegar, and minced garlic. Marinate for at least 30 minutes.

Make the Caramel Sauce
In a medium saucepan over medium heat, add brown sugar and 2 tablespoons of water. Stir until sugar dissolves, then let it boil without stirring until it turns a deep amber color. Remove from heat and set aside.

Cook the Chicken
Heat vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook for about 6-8 minutes on each side until cooked through and caramelized.

Combine Chicken and Sauce
Pour the caramel sauce over the cooked chicken in the skillet and toss to coat evenly. Cook for an additional 2-3 minutes until the sauce thickens slightly.

Prepare the Asian Greens
In a separate pot, steam the Asian greens until tender, about 5 minutes.

Serve the caramel chicken over steamed rice with a side of Asian greens.
