Prepare the Paneer

Cut the paneer into bite-sized cubes and lightly fry them in a pan with a little oil until golden brown. Set aside.

Cook the Spinach Masala

In the same pan, add more oil if necessary and sauté the chopped onion until translucent. Add minced garlic, grated ginger, and chopped green chili; sauté for a few more minutes.

Add Tomatoes and Spices

Add the pureed tomato to the pan and cook until it thickens. Then add ground cumin, ground coriander, turmeric, chili powder, and salt to taste.

Incorporate Spinach and Cream

Add the fresh spinach and cook until wilted. Stir in the heavy cream, sliced almonds, and sultanas. Let it simmer for a few minutes.

Combine Paneer

Gently fold in the fried paneer cubes and simmer for another 5 minutes to allow flavors to meld.

Make the Fry Bread

In a bowl, mix flour, baking powder, and a pinch of salt. Gradually add water until a soft dough forms. Divide into small balls and roll them out. Fry until golden on both sides.

Serve

Serve the saag paneer hot, garnished with chopped cilantro, alongside the chili fry bread.
