Prepare the Filling
In a mixing bowl, combine ground pork, green onions, garlic, ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are evenly combined.

Fill the Dumplings
Take a potsticker wrapper and place about 1 tablespoon of the filling in the center. Wet the edges of the wrapper with water, fold in half, and pinch to seal. Repeat with remaining wrappers and filling.

Cook the Dumplings
Heat a non-stick skillet over medium heat and add a bit of oil. Once hot, place the dumplings in the skillet and cook for about 2-3 minutes or until the bottoms are golden brown. Add a splash of water to the skillet, cover immediately, and steam for an additional 5 minutes.

Prepare Nuoc Cham Dipping Sauce
In a small bowl, whisk together 3 tablespoons of fish sauce, 2 tablespoons of lime juice, 1 tablespoon of sugar, and 1 minced garlic clove. Adjust to taste.

Serve
Remove the lid from the skillet and let any remaining water evaporate. Serve the potstickers hot with the nuoc cham dipping sauce on the side.
