Pad Thai – Chicken or Tofu Recipe

Prepare the Noodles

Soak the rice noodles in warm water for about 30 minutes or until they are soft. Drain and set aside.

Cook the Protein

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. If using chicken, slice it thinly and cook until no longer pink, about 5-7 minutes. If using tofu, cube it and sauté until golden brown. Remove from the skillet and set aside.

Stir-Fry the Noodles

In the same skillet, add another tablespoon of oil. Add the soaked noodles, tamarind paste, soy sauce, fish sauce, and brown sugar. Stir-fry for about 3-4 minutes until the noodles are heated through and well coated.

Combine Ingredients

Push the noodles to one side of the skillet. If using eggs, crack them into the skillet and scramble until cooked. Then mix everything together. Add the cooked chicken or tofu back into the skillet, along with scallions and half of the peanuts. Stir until everything is combined.

Serve

Plate the Pad Thai and sprinkle with the remaining peanuts and chopped cilantro. Serve with lime wedges on the side.
