Prepare the Ingredients
Start by slicing the BBQ pork and setting it aside. Peel and devein the shrimp if not done already. Rinse the Asian greens and chop them into bite-sized pieces.
Cook the Noodles
In a large pot of boiling salted water, cook the Shanghai noodles according to the package instructions. Drain and set aside.
Make the Curry Sauce
In a saucepan, combine coconut milk, curry paste, soy sauce, brown sugar, and lime juice. Heat over medium heat, stirring until the mixture is well combined and heated through.
Stir Fry the Ingredients
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the BBQ pork and shrimp, cooking until the shrimp turns pink. Then, add the Asian greens and stir-fry until they are wilted.
Combine Everything
Add the cooked Shanghai noodles to the skillet with the stir-fried ingredients. Pour the curry sauce over and toss everything together until well combined and heated through.
Serve
Remove from heat, garnish with chopped cilantro and toasted almonds before serving.
