Cure the Tuna
In a bowl, combine the soy sauce and cubed albacore tuna. Allow the tuna to marinate for at least 30 minutes in the refrigerator.

Prepare the Cucumber
Slice the cucumber thinly and toss it with rice vinegar. Let it sit for about 15 minutes to absorb the flavor.

Pickle the Jalapeños
Slice the jalapeños and combine them with the pickled red onion in a small bowl. Allow them to marinate together for about 10 minutes.

Prepare the Rice
Steam the rice according to package instructions while you prepare the other ingredients.

Assemble the Bowl
In a serving bowl, add a base of steamed rice. Top with the cured tuna, marinated cucumber, pickled jalapeños, pickled red onion, and chopped scallions. Sprinkle sesame seeds on top.

Season with salt and pepper to taste, and serve immediately.
