Cooking Instructions
- 1
Prepare the Medallions
Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes before cooking.
- 2
Season the Meat
Rub both sides of the filet medallions with olive oil, and then generously season with kosher salt and black pepper.
- 3
Heat the Pan
Heat a heavy skillet (preferably cast iron) over medium-high heat until it's hot.
- 4
Sear the Medallions
Add the filet medallions to the skillet and sear for about 3-4 minutes on each side for medium-rare doneness, depending on the thickness.

Add Flavor
During the last minute of cooking, add the butter, garlic cloves, and fresh rosemary to the pan. Spoon the melted butter over the medallions.
- 6
Rest the Meat
Remove the medallions from the pan and let them rest for at least 5 minutes before serving.
