In a medium saucepan, combine the heavy cream, whole milk, and sugar. Heat over medium heat, stirring occasionally until the mixture is warm and the sugar has dissolved.

Cook the mixture over medium heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 170°F/77°C). Remove from heat and stir in the vanilla extract.

Transfer the mixture to a bowl, cover, and refrigerate for at least 4 hours or overnight.
