Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. In a rice cooker, combine rice and water, and cook according to the rice cooker's instructions. Once cooked, let it cool slightly.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold the mixture into the warm rice. Allow the rice to cool to room temperature.

Make the Spicy Aioli
In a bowl, combine mayonnaise, sriracha, lime juice, and minced garlic. Mix well and set aside.

Prepare the Wasabi Crema
In a small bowl, mix sour cream with wasabi paste until smooth. Set aside.

Make the Eel Sauce
In a saucepan over medium heat, combine soy sauce, brown sugar, mirin, cornstarch, and water. Stir frequently until the mixture thickens. Remove from heat and let cool.

Heat a non-stick skillet over medium-high heat. Form the sushi rice into small patties and fry until golden brown and crispy on both sides, about 3-4 minutes per side.
