Method

Prepare the Croutons

Preheat the oven

Preheat your oven to 375°F (190°C) to bake the croutons.

Prepare the bread

Cut day-old bread into 1/2-inch cubes. You can use sourdough, whole wheat, or any bread of your choice.

Season the croutons

In a bowl, toss the bread cubes with olive oil, a pinch of salt, pepper, and optional minced garlic or herbs like thyme or rosemary for extra flavor.

Bake the croutons

Spread the seasoned bread cubes on a baking sheet in a single layer. Bake for 10–15 minutes until golden and crispy, flipping halfway through. Let cool.

Make the Caesar Dressing

Prepare dressing ingredients

Gather the ingredients: 1/4 cup olive oil or vegan mayo, 1 tablespoon Dijon mustard, 2 tablespoons lemon juice, 2 tablespoons nutritional yeast, 1–2 cloves of garlic (minced), 1 teaspoon capers or anchovy paste (optional), salt and pepper to taste.

Blend the dressing

Add all the dressing ingredients to a blender or food processor. Blend until smooth and creamy. Taste and adjust seasoning with more lemon juice, salt, or nutritional yeast if desired.

Assemble the Salad

Prepare the kale

Wash and dry a bunch of organic kale. Remove tough stems and tear the leaves into bite-sized pieces. Optionally, massage the kale with a small amount of olive oil for 1–2 minutes to soften the texture.

Toss kale with dressing

In a large bowl, toss the kale with the prepared Caesar dressing until all leaves are well coated.
