    Prepare the Steak

    Take the New York Strip steak out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This helps it cook more evenly.

    Season the Steak

    Generously season both sides of the steak with kosher salt and black pepper. Use your hands to press the seasoning into the meat.

    Heat the Pan

    Heat a heavy skillet or cast iron pan over medium-high heat. Add the olive oil and let it heat until shimmering.

    Sear the Steak

    Once the oil is hot, add the steak to the pan. Sear for about 4-5 minutes on one side without moving it, until a nice crust forms.

    Flip and Add Aromatics

    Flip the steak and add the fresh rosemary and garlic cloves to the pan. Sear for another 4-5 minutes for medium-rare, or until desired doneness.

    Rest the Steak

    Remove the steak from the pan and let it rest for at least 5-10 minutes before slicing. This allows the juices to redistribute.
