1. Prepare the Marinade
In a small bowl, whisk together olive oil, lemon juice, minced garlic, chopped parsley, salt, and black pepper.
2. Marinate the Fish
Place the white fish fillets in a shallow dish and pour half of the marinade over the fish. Let it marinate for 15-30 minutes.
3. Prepare the Vegetables
While the fish is marinating, preheat your grill or oven to 400°F (200°C). Toss the cherry tomatoes and asparagus with the remaining marinade in a separate bowl.
4. Cook the Fish and Vegetables
Place the marinated fish on the grill or in a baking dish. Arrange the cherry tomatoes and asparagus around the fish. Grill or bake for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
5. Serve
Remove from heat and serve the fish and vegetables warm, garnished with additional parsley if desired.
