Preparing the Wagyu Sirloin

Sear the Steak

Season the Wagyu sirloin generously with salt and black pepper. Heat a skillet over high heat and add a bit of oil. Sear the steak for 4-5 minutes on each side for medium-rare. Let it rest for 10 minutes before slicing.

Making Wild Mushroom Gratin

Prepare the Mushrooms

In a skillet, melt butter over medium heat. Add garlic and mushrooms, sauté until mushrooms are tender. Stir in thyme.

Combine Cream and Cheese

In a bowl, mix heavy cream and Parmesan cheese. Add the sautéed mushrooms to the mixture and stir to combine.

Bake the Gratin

Transfer the mixture to a baking dish, sprinkle with bread crumbs, and bake at 375°F (190°C) for 25 minutes until golden brown.

Cooking Sunchokes

Roast the Sunchokes

Toss sunchokes with olive oil, salt, and pepper. Spread on a baking sheet and roast at 400°F (200°C) for 20-25 minutes until golden and crispy.

Making Black Truffle Butter

Mix the Ingredients

In a bowl, combine softened butter, black truffle oil, and salt to taste. Mix until smooth and well combined.
