Prepare the Salad

Slice radishes and little carrots. Toss them with roasted and raw fennel, blood orange segments, and crème fraîche. Drizzle with melted butter and tapenade.

Choose one protein option (roasted asparagus, striped bass, etc.) and cook according to preference. Season with Iberico butter or tangerine butter.

In a large bowl, combine local greens, sliced shallots, minced garlic, lemon juice, and roasted carrots. Serve with green romesco and coriander almonds.
