Pork Tacos 'Al Pastor

    Marinate the Pork

    In a large bowl, combine the pork shoulder with the adobo sauce, lime juice, salt, and pepper. Cover and refrigerate for at least 2 hours, preferably overnight.

    Cook the Pork

    Preheat a grill or skillet over medium-high heat. Remove the pork from the marinade and cook for about 6-8 minutes on each side, or until charred and cooked through. Remove from heat and let rest for 10 minutes.

    Prepare the Pineapple and Tomatillo

    While the pork is resting, grill or sauté the diced pineapple and tomatillos until they are slightly charred and softened, about 5-7 minutes.

    Assemble the Tacos

    Slice the pork into thin strips. Warm the corn tortillas on the grill or in a skillet. In each tortilla, place some pork, topped with charred pineapple, tomatillo, diced onion, and cilantro.

    Serve

    Serve the tacos with extra lime wedges on the side for squeezing on top.
