Grilled Branzino

Prepare the Fish

Clean the branzino, removing scales and innards. Make three diagonal cuts on each side of the fish and season with olive oil, salt, and black pepper. Stuff the cavity with lemon slices and fresh parsley.

Grill the Fish

Preheat the grill to medium-high heat. Grill the branzino for about 6-8 minutes on each side, or until the flesh is opaque and flakes easily with a fork.

Cook the Rice

In a saucepan, combine jasmine rice, coconut milk, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until rice is tender and liquid is absorbed.

Cashew Sambal

Prepare the Sambal

In a food processor, combine cashews, red chili flakes, garlic, lime juice, salt, and olive oil. Blend until smooth, adding a little water if needed to adjust consistency.
