Method

Preparation of Gougères

1

Preheat the Oven

Preheat your oven to 400°F (200°C).

2

Make the Dough

In a medium saucepan, combine water, butter, and salt. Bring to a boil over medium heat. Once boiling, remove from heat and add the flour all at once. Stir vigorously until the mixture forms a ball and pulls away from the sides of the pan.

3

Incorporate Eggs

Allow the dough to cool slightly, then add the eggs one at a time, mixing well after each addition until fully incorporated. The dough should be smooth and glossy.

4

Add Cheese

Stir in the grated cheese until evenly distributed.

5

Shape the Gougères

Using a pastry bag or a spoon, drop tablespoon-sized mounds of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.

6

Bake

Bake in the preheated oven for 20-25 minutes or until the gougères are puffed and golden brown.

7

Prepare the Filling

While the gougères are baking, prepare the filling by slicing the jamón into strips.

8

Assemble

Once the gougères are baked and slightly cooled, cut a small slit in the side of each and fill them with a slice of jamón and a dollop of romesco sauce.
