Preparation of Gougères
Preheat the Oven
Preheat your oven to 400°F (200°C).
Incorporate Eggs
Allow the dough to cool slightly, then add the eggs one at a time, mixing well after each addition until fully incorporated. The dough should be smooth and glossy.
Add Cheese
Stir in the grated cheese until evenly distributed.
Shape the Gougères
Using a pastry bag or a spoon, drop tablespoon-sized mounds of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
Bake
Bake in the preheated oven for 20-25 minutes or until the gougères are puffed and golden brown.
Prepare the Filling
While the gougères are baking, prepare the filling by slicing the jamón into strips.
Assemble
Once the gougères are baked and slightly cooled, cut a small slit in the side of each and fill them with a slice of jamón and a dollop of romesco sauce.
