Braised Wagyu Brisket

    Prepare the Brisket

    Season the Wagyu brisket with salt and black pepper. In a large pot, heat olive oil over medium-high heat. Brown the brisket on all sides, then remove and set aside.

    Sauté Vegetables

    In the same pot, add chopped onion and minced garlic. Sauté until softened, about 5 minutes.

    Braise the Brisket

    Return the brisket to the pot. Add beef broth, cumin, smoked paprika, and bay leaves. Bring to a simmer, cover, and reduce heat to low. Cook for 3-4 hours or until the brisket is tender.

    Shred the Brisket

    Remove the brisket from the pot, let it rest for 10 minutes, then shred with two forks.

Pickled Red Onions

    Pickle the Onions

    In a bowl, combine white vinegar, sugar, salt, and water. Stir until dissolved. Add sliced red onions, cover, and refrigerate for at least 1 hour.

Habanero Crema

    Make the Crema

    In a bowl, mix sour cream, minced habanero, lime juice, and salt until well combined.

Salsa Verde

    Prepare the Salsa

    In a blender, combine tomatillos, cilantro, jalapeño, lime juice, and salt. Blend until smooth.

Taco Assembly

    Assemble the Tacos

    Warm corn tortillas. Fill each tortilla with shredded brisket, top with pickled red onions, habanero crema, and salsa verde. Garnish with fresh cilantro and serve with lime wedges.
