Make the Dough
In a large bowl, mix flour and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs. Stir in cold water, a tablespoon at a time, until dough comes together. Wrap in plastic and refrigerate for at least 30 minutes.

Prepare the Filling
In a bowl, combine diced apples, brown sugar, cinnamon, lemon juice, and cornstarch. Mix well and set aside.

Candy the Walnuts
In a saucepan over medium heat, combine walnuts, sugar, and water. Stir until the sugar dissolves and the mixture begins to boil. Cook for about 5 minutes until thickened. Spread on a parchment-lined baking sheet to cool.
Assembly and Baking

Assemble the Hand Pies
Preheat oven to 375°F (190°C). Roll out the dough on a floured surface and cut into circles. Place a tablespoon of apple filling on one half of the circle, fold over, and seal the edges with a fork. Repeat with remaining dough and filling.

Bake the Pies
Place the hand pies on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown. Remove from oven and let cool slightly.

Serve warm with scoops of vanilla ice cream and sprinkle with candied walnuts on top.
