1. Prepare the Meatballs
In a bowl, combine ground beef, breadcrumbs, egg, minced garlic, chopped parsley, salt, and black pepper. Mix until well combined.
2. Form the Meatballs
Shape the mixture into small meatballs, about 2.5 cm in diameter.
3. Cook the Meatballs
In a skillet, heat olive oil over medium heat. Add the meatballs and cook until browned on all sides. Remove and set aside.
4. Make the Sauce
In the same skillet, add chopped onion and minced garlic. Sauté until onion is translucent.
5. Combine Sauce Ingredients
Stir in tomato puree, chicken broth, paprika, salt, black pepper, and bay leaf. Bring to a simmer.
6. Simmer Meatballs in Sauce
Return the meatballs to the skillet and let them simmer in the sauce for about 20 minutes, until cooked through.
7. Serve
Remove the bay leaf and serve the albondigas hot with the sauce.
