Prepare the Home Fries
Peel and dice the potatoes into small cubes. Boil them in salted water for about 5 minutes until just tender. Drain and set aside.

Cook the Pork Belly
In a skillet over medium heat, cook the smoked pork belly until crispy. Remove and set aside.

Fry the Home Fries
In the same skillet, add a tablespoon of butter and the boiled potatoes. Season with salt and pepper, and fry until golden brown and crispy. Set aside.

Dip and Cook the Bread
Dip each slice of sourdough bread into the egg mixture, ensuring both sides are coated. In the skillet, melt a tablespoon of butter and cook the bread slices until golden brown on both sides.

Assemble the Sandwich
On one slice of French toast, layer the crispy smoked pork belly, a slice of smoked gouda, and an over-easy egg. Top with another slice of French toast.

Prepare the Berry Maple Syrup
In a small saucepan, heat the maple syrup and stir in the mixed berries until warmed through.
