Cooking the Pasta
Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
Sautéing Vegetables
In a large skillet, heat olive oil over medium heat. Add the diced onion and sliced bell peppers. Sauté until they are soft and translucent, about 5-7 minutes.
Adding Garlic and Seasoning
Stir in the minced garlic and Cajun seasoning. Cook for an additional 1-2 minutes until fragrant.
Creating the Sauce
Pour in the heavy cream and bring to a gentle simmer. Cook for about 3-5 minutes until the sauce thickens slightly.
Combining Pasta and Sauce
Add the cooked penne pasta to the skillet. Toss to coat the pasta in the Cajun cream sauce. Stir in the grated Parmesan cheese until melted and combined.
Seasoning
Season with salt and black pepper to taste. Adjust the seasoning as needed.
Serving
Serve hot, garnished with additional Parmesan cheese and chopped parsley, if desired.
