Prepare the Filling
In a skillet, cook the chopped mushrooms and fresh spinach until softened. Add the cooked bacon and cream cheese, mixing until smooth. Stir in the shredded Swiss cheese and season with salt and pepper. Remove from heat and let cool.
Prepare the Chicken
Preheat the oven to 375°F (190°C). Place each chicken breast between two pieces of plastic wrap and pound until about 1/2 inch thick. Season with salt and pepper.
Stuff the Chicken
Spoon the filling onto one side of each chicken breast. Fold over the other side and secure with toothpicks or kitchen twine.
Breading the Chicken
Set up a breading station: place flour in one dish, beaten egg in another, and breadcrumbs in a third. Dredge each stuffed chicken breast in flour, dip in egg, and coat with breadcrumbs.
Cooking the Chicken
In a large skillet, heat enough oil to cover the bottom over medium heat. Cook the chicken breasts for 4-5 minutes on each side or until golden brown. Transfer to a baking dish.
Make the Gravy
In the skillet, melt butter and whisk in flour to create a roux. Gradually add chicken broth and milk, whisking until thickened. Season with salt and pepper.
Bake the Chicken
Pour the gravy over the chicken breasts and bake in the preheated oven for 20-25 minutes or until the chicken is cooked through.
Serve
Serve the stuffed chicken with mashed potatoes or French fries on the side, drizzling additional gravy on top.
