    Prepare the Home Fries

    Peel and dice the potatoes into small cubes. In a skillet, heat olive oil over medium heat. Add the diced potatoes, paprika, salt, and black pepper. Cook, stirring occasionally, until the potatoes are golden and crispy, about 15-20 minutes. Set aside.

    Poach the Eggs

    Fill a pot with water and bring it to a gentle simmer. Crack each egg into a small bowl, then gently slide them into the simmering water. Poach the eggs for about 3-4 minutes, or until the whites are set but the yolks are still runny. Remove with a slotted spoon and place on a paper towel.

    On a plate, place a portion of the smoked brisket. Top it with a poached egg, then drizzle generously with Hollandaise sauce. Serve alongside the crispy home fries and garnish with fresh parsley.
