Prepare the Ricotta Filling
In a bowl, mix the ricotta cheese with powdered sugar until smooth and creamy. Set aside.

Make the Egg Mixture
In another bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.

Assemble the French Toast
Spread a generous amount of the ricotta mixture on 4 slices of bread, then top with the remaining slices to create sandwiches.

Cook the French Toast
Heat 2 tablespoons of butter in a large skillet over medium heat. Dip each sandwich in the egg mixture, allowing excess to drip off, then place in the skillet. Cook until golden brown on both sides, about 3-4 minutes per side. Repeat with remaining sandwiches, adding more butter as needed.

In a small saucepan, combine the mixed berries and maple syrup over medium heat. Cook until the berries are warm and slightly softened, about 5 minutes.
