Prepare the Potatoes
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are golden brown and tender.

Fry the Eggs
In a separate non-stick pan, heat the remaining tablespoon of olive oil over medium heat. Crack the eggs into the pan and cook until the whites are set and the yolks are still runny, about 3-4 minutes. Season with salt and pepper.

Combine and Serve
Once the brisket and potato mixture is ready, transfer it to serving plates. Top each plate with a fried egg and garnish with chopped scallions. Serve immediately.
