    Prepare the Batter

    In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and pepper. Gradually add the beer to the dry ingredients, mixing until smooth.

    Heat the Oil

    In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Batter the Walleye

    Dip each walleye fillet into the batter, ensuring it is fully coated.

    Fry the Fish

    Carefully place the battered walleye fillets into the hot oil, frying them in batches for about 4-5 minutes or until golden brown. Remove and drain on paper towels.

    Assemble the Sandwich

    Place a fried walleye fillet on the bottom half of each sandwich bun. Add a generous amount of tartar sauce and top with the other half of the bun.
