1. Prepare the Rice
Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine 2 cups of jasmine rice with 4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let it sit covered for 5 minutes.
2. Cook the Chicken
Season the chicken breasts with salt and black pepper. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chicken breasts and cook for 5-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
3. Sauté the Vegetables
In the same skillet, add sliced onions, mushrooms, and bell peppers. Sauté for about 5-7 minutes, or until the vegetables are tender and slightly caramelized.
4. Combine and Melt the Cheese
Return the cooked chicken to the skillet with the sautéed vegetables. Layer Swiss and cheddar cheese over the chicken and cover the skillet. Allow the cheese to melt for about 3-5 minutes.
5. Serve
Fluff the jasmine rice with a fork and serve it on plates. Top the rice with the smothered chicken and vegetable mixture. Enjoy!
