    Cook the Pasta

    In a large pot, bring salted water to a boil. Add the penne noodles and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce

    In the same pot, melt the butter over medium heat. Whisk in the flour and cook for about 2 minutes until bubbly. Gradually whisk in the milk and continue to whisk until the mixture thickens, about 5-7 minutes.

    Add the Cheeses

    Remove the pot from heat and stir in the cheddar, mozzarella, Parmesan, and Gorgonzola cheeses until melted and smooth. Season with salt, black pepper, garlic powder, and paprika.

    Combine Pasta and Sauce

    Add the cooked penne noodles to the cheese sauce and stir until well coated.

    Prepare for Baking

    Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture to a greased baking dish and top with shredded Cojack cheese.

    Bake

    Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden brown on top.
