Cook the Tortellini
In a large pot of salted boiling water, cook the tri-colored tortellini according to package instructions until al dente. Drain and set aside.

Cook the Chicken
In a large skillet, heat the olive oil over medium heat. Season the chicken breast with salt and black pepper. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until cooked through. Remove from skillet and let it rest for a few minutes before slicing.

Prepare the Sauce
In the same skillet, add the minced garlic and sliced mushrooms. Sauté until the mushrooms are tender, about 5 minutes. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan, mozzarella, and ricotta cheese until melted and well combined.

Combine Everything
Add the cooked tortellini and sliced chicken to the skillet with the sauce. Toss everything together to coat the tortellini and chicken in the creamy sauce. Cook for an additional 2-3 minutes until heated through.

Garnish with chopped fresh parsley and serve immediately.
