Prepare the Béchamel Sauce
In a saucepan, melt the butter over medium heat. Once melted, add the flour and whisk continuously for about 2 minutes to form a roux. Gradually pour in the milk while whisking to avoid lumps. Cook until the sauce thickens, about 5-7 minutes. Season with nutmeg, salt, and black pepper. Set aside.

Cook the Sausage
In a skillet over medium heat, cook the house made sausage until browned and fully cooked, about 10 minutes. Break it apart into crumbles as it cooks.

Sauté the Apple and Sage
Add the diced Granny Smith apples and fresh sage leaves to the skillet with the sausage. Sauté for an additional 5 minutes until the apples are tender.

Combine and Serve
In a large bowl, combine the sausage-apple mixture with the béchamel sauce. Mix well. Serve warm, topped with grated Parmesan cheese and micro greens.
