    Rinse the Lentils

    Place the lentils in a colander and rinse them under cold water until the water runs clear. This helps to remove any debris or dust.

    Chop the Vegetables

    Peel and finely slice the onions. Mince the garlic cloves.

Cooking

    Cook the Lentils

    In a large pot, combine the rinsed lentils and 3 cups of water or vegetable broth. Bring to a boil, then reduce the heat to low and simmer for about 20-25 minutes, or until the lentils are tender but not mushy. Drain any excess liquid.

    In the same pot, heat the olive oil over medium heat. Add the sliced onions and cook until they become golden brown, about 10-15 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes.

    Stir in the cumin, cinnamon, salt, and black pepper, cooking for another minute to release the spices' aromas.

    Combine Bulgur and Lentils

    Add the bulgur wheat to the pot and mix well. Pour in the cooked lentils, stirring to combine all ingredients. Add an additional 2 cups of water or vegetable broth if needed.

    Cover the pot and reduce the heat to low. Let it simmer for about 15-20 minutes, or until the bulgur absorbs the liquid and is tender.
