Grilled Chicken

1. Prepare Marinade

In a small bowl, mix olive oil, minced garlic, lemon juice, salt, black pepper, and dried oregano.

2. Marinate Chicken

Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken and ensure it is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes.

3. Preheat Grill

Preheat your grill to medium-high heat.

4. Grill Chicken

Remove the chicken from the marinade and discard the marinade. Place the chicken on the grill and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

5. Prepare Vegetables

Wash and slice the zucchini and bell pepper into strips. Peel and slice the carrots.

6. Toss and Season

In a bowl, toss the vegetables with olive oil, salt, and black pepper.

7. Grill Vegetables

Place the seasoned vegetables on the grill for about 5-7 minutes, turning occasionally until they are tender and have grill marks.

Mashed Potatoes

8. Boil Potatoes

Peel the potatoes and cut them into quarters. Place them in a pot of salted water and bring to a boil. Cook until the potatoes are fork-tender, about 15-20 minutes.

9. Mash Potatoes

Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.
