Prepare the Lamb Kebab

    Marinate the Lamb

    In a large bowl, combine diced lamb shoulder, olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, and lemon juice. Mix well to coat the lamb evenly. Cover and refrigerate for at least 1 hour, or overnight for best flavor.

    Skewer the Lamb

    After marinating, thread the lamb pieces onto the soaked skewers, leaving a little space between each piece.

    Grill the Kebabs

    Preheat the grill to medium-high heat. Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the lamb is browned and cooked to your desired doneness.

    Cook the Rice

    In a medium saucepan, combine basmati rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and water is absorbed. Remove from heat and stir in butter.

    Mix the Salad

    In a mixing bowl, combine diced cucumber, diced tomato, sliced red onion, and chopped parsley. Drizzle with olive oil and lemon juice, then season with salt and black pepper to taste. Toss gently to combine.
