    Prepare the Marinade

    In a large bowl, combine olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper. Mix well to create a marinade.

    Marinate the Lamb

    Cut the lamb shoulder into chunks and add to the marinade. Toss to coat the lamb thoroughly. Cover and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.

    Cook the Lamb

    Preheat your grill or oven to high heat. If grilling, thread lamb pieces onto skewers. Grill for about 10-15 minutes, turning occasionally, until the lamb is cooked to your desired doneness. If using an oven, place lamb on a baking sheet and roast for about 20-25 minutes, until cooked through. Let rest for 5 minutes.

    Prepare the Pita

    While the lamb is resting, warm the pita bread in a dry skillet over medium heat for about 1-2 minutes on each side, or until soft and pliable.

    Assemble the Gyro

    Slice the cooked lamb into thin strips. Place a generous amount of sliced lamb in the center of each pita bread. Top with diced tomatoes, sliced red onions, diced cucumbers, and a generous dollop of tzatziki sauce.

    Fold the pita over the fillings and serve immediately while warm.
