Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and lightly dust them with flour to prevent sticking.

  2. 2

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Heat in the microwave in 30-second intervals, stirring after each interval, until melted and smooth.

  3. 3

    Mix Sugar and Eggs

In a separate mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until well combined and slightly frothy.

  4. 4

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture, whisking continuously to prevent the eggs from cooking.

  5. 5

    Add Vanilla, Flour, and Salt

Add the vanilla extract, all-purpose flour, and a pinch of salt to the chocolate mixture. Gently fold until just combined; be careful not to overmix.

Baking

  1. 6

    Fill Ramekins

Evenly distribute the batter among the prepared ramekins, filling them about 3/4 full.

  2. 7

    Bake

Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  3. 8

    Cool Slightly

Remove the ramekins from the oven and allow them to cool for about 1-2 minutes.

Serving

  1. 9

    Serve Lava Cake

Carefully run a knife around the edges of each ramekin to loosen the cake. Invert each ramekin onto a plate to release the cake. Dust with powdered sugar and serve immediately with scoops of vanilla ice cream.
