Clean the Mussels
Rinse the fresh mussels under cold running water, scrubbing the shells with a brush to remove any dirt or debris. Remove the beards (the fibrous bits sticking out of the shell) by pulling them off firmly.

Mince the Garlic
Peel and finely mince the garlic cloves.

Chop the Parsley
Finely chop the fresh parsley and set aside.

Add Wine and Tomatoes
Pour in the white or red wine and add the crushed tomatoes. Stir to combine and let the mixture simmer for about 5 minutes.

Season the Sauce
Add the red pepper flakes, salt, and black pepper to the sauce. Stir well and allow it to simmer for another 2-3 minutes.

Cook the Mussels
Add the cleaned mussels to the pot and cover with a lid. Cook for about 5-7 minutes, or until the mussels open up. Discard any mussels that remain closed.

Finish and Serve
Once cooked, sprinkle the chopped parsley over the mussels and sauce. Serve immediately with crusty bread or over pasta, if desired.
