Method

Cooking the Pasta

  1. 1

    Boil Water

In a large pot, bring 4 liters of water to a rolling boil over high heat.

  2. 2

    Add Salt

Once the water is boiling, add 1 tablespoon of salt to the water.

  3. 3

    Cook Spaghetti

Add 200g of spaghetti to the boiling water and cook according to package instructions, usually around 8-10 minutes, until al dente.

  4. 4

    Drain Pasta

Once cooked, reserve 1 cup of pasta water, then drain the spaghetti and set aside.

Preparing the Sauce

  1. 5

    Sauté Garlic

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 3 minced garlic cloves and sauté for 1-2 minutes until fragrant.

  2. 6

    Add Tomatoes

Add 400g of halved cherry tomatoes to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the tomatoes soften and start to break down.

  3. 7

    Season the Sauce

Stir in 1 teaspoon of salt and 1 teaspoon of black pepper. Cook for an additional 2-3 minutes.

  4. 8

    Add Basil

Remove the skillet from heat and stir in 1 cup of fresh basil leaves.

  5. 9

    Combine with Pasta

In the pot with the drained spaghetti, add the tomato mixture. Toss everything together, adding some reserved pasta water as needed to achieve desired consistency.

  6. 10

    Serve

Plate the pasta and top with grated 50g of Parmesan cheese.
